Greater than one weekI love this knife so much that I bought one for my best friend for Christmas this year. Being so long, its great for chopping nuts because it fits all the way across the nuts as they expand during chopping. Great for melons and large squashes. Cutting fudge, brownies, cakes, etc. is easy. My only complaint is that the knifes handle grip is slightly taller than the knife blade, so the handle hits the cutting surface and suspends the handle end of the knife blade a tiny bit above the cutting surface. The blade should be a little deeper than the handle, not vice-versa. But the blade length is special and very, very useful. It more than offsets the small flaw in the handle height.

> 3 dayIve wanted a professional, dedicated slicing knife for my culinary tool kit. This one is marvelous. Its beautiful, with a fine blade and practical black plastic handle. The handle feels great - not cheap plastic - and has a good grip to it. The blase is well formed, flexible and has the Victorinox stamp on it (Victorinox actually started making knives before watche and I have an amazing Victorinox watch). This knife will slice meats and fish very, very thin. The scallops on the blade are just the right size and indentation. The knife comes well-sharpened. I was a professional chef and want high-caliber tools. This knife is everything I wanted and hoped to have. Ill end up passing it to my son for him to enjoy as a family heirloom.

> 3 dayLove this knife for what it is. It has become my second most used knife, behind my laser. When I let my friends use it, the only thing I have to worry about is them taking it home. With my expensive knives, Im worried about them abusing them. Not this gem. It can take all the abuse you can throw at it. It is great for slicing meats, tomatoes, etc. The blunt tip makes it not ideal for chopping onions, but works great for 2 of the 3 cuts. I just use a small paring knife for the cross cut portion.

> 3 dayI received product on the date as promised (thank you Amazon). I unpacked the knife, washed it and got my first impressions: too long and handle not of good quality. Then I noticed that it was well balanced, the handle (which has a mild rough surface), provides excellent grip even when wet, and the blade was a little more flexible that my other knives. Now for the testing. I thinly sliced (and I do mean THIN) a lime, orange, onion, carrot (yes, I went this crazy), and then moved on to ham and salami. This knife is in a word, incredible. Very little force was needed to slice any fruits or veggies as mentioned. A little more force needed for ham and salami, depending on how thin you want the slices. As for length, 12 inches may seem to long for a knife, but it gives you the feel of stability when slicing. Knife is stainless steel and obviously quick to clean up. Caution: knife is very sharp and will probably remain very sharp for some time. I should have bought this knife years ago. As for price, I initially thought it to be a bit high. Wrong! You get what you pay for and in this case, this knife is worth it and then some. I have no CONS for this item and highly recommend it to anyone needing a very high quality slicing knife.

> 3 dayThe knife arrived in an oversized clear plastic sleeve, which is not really great for storage exactly...so, that detail I need to work out. But that is not really a knife critique. This knife came out of the package sharp as a razor. The handle is textured, and I think that it allows for a secure grip even with wet or slippery hands. The handle may be a bit short, but that is a nitpick thing that I do not think is of any real concern. The blade is thin, and I used it twice immediately to see how well it cut: First, to cut cooked strip steaks for presentation (I wanted to see how well this thing sliced). Like a hot knife through butter (no pun really intended, but it is an opportunistic metaphor). Second, to open a two-bone rib roast vacuum bag, and slice the rib roast into two (gigantic) steaks. The plastic bags I use for vacuum packing/freezing are pretty thick, and while not really that difficult to cut open, if your knife is not optimum sharp, you need to have a little bit of tension on the bag to get it to cut. With this knife, I had no issues. I had decided to butcher the rib roast (by cutting it in half) anyway, and this thin blade was the perfect tool. Two perfect steaks, and I could tell that this was a definite purpose slicing blade...I could tell that this was a thin blade design, and really sharp. I purchased this to cut brisket. I am smoking a brisket today, and I fully expect perfect slices with this knife. This brand came highly recommended, and I think that I agree. Hoping that the edge stays sharp... I am looking at a butcher essentials set from Victorinox, as well...might as well get some real tools that are right for the job.
