Extremely sharp and very easy to control well. I make a lot of tri-tip and this is perfect for slicing through it. Ive not had to sharpen it yet so I cant speak to that, but all in all I am very happen with the blade.

This is the sharpest dang knife that I own! This knife sliced through a 15-pound brisket like butter and allowed me to cut it as thin or as thick as I wanted. Definitely recommend buying, if youre looking for a good, sharp knife for your kitchen work.

Great carving knife

A lightweight, easy to grip, well-balanced slicing knife. The edge is superb and has thus far been simple to maintain; a few passes through a fixed, double edged, ceramic sharpener and 8 or 10 strokes on a steel and the edge is actually sharper than when I removed it from the box! This knife makes it very simple to slice brisket, steaks of any cut, tri-tips, roast beef, ham or turkey. You must have one for your kitchen.

This is a large, quality granton slicer. Took care of an 18lb brisket. Most folks wont need one this large, and Ill probably end up getting the 10 model. But if you regularly tackle large cuts of meat, this is your guy.

It does not slice, it glides through everything. Wonderful addition to the kitchen.

Great addition to my knives. Made pork loin tips and it sliced them thin enough for sandwiches for days. I love this knife.
