Greater than one weekExtremely sharp and very easy to control well. I make a lot of tri-tip and this is perfect for slicing through it. Ive not had to sharpen it yet so I cant speak to that, but all in all I am very happen with the blade.

The edge is superb and has thus far been simple to maintain; a few passes through a fixed, double edged, ceramic sharpener and 8 or 10 strokes on a steel and the edge is actually sharper than when I removed it from the box! This knife makes it very simple to slice brisket, steaks of any cut, tri-tips, roast beef, ham or turkey. You must have one for your kitchen.

> 3 dayThis is a large, quality granton slicer. Took care of an 18lb brisket. Most folks wont need one this large, and Ill probably end up getting the 10 model. But if you regularly tackle large cuts of meat, this is your guy.
